DT4MND Cupcakes


from 'Vanilla Cake' recipe by Don McMurray, published in 'Don's Delights' by Don McMurray

Ingredients:

Cupcakes
3 tablespoons soft unsalted butter
1 1/2  cups caster sugar
2 eggs
2 cups plain flour (can substitute with spelt flour)
2 1/2 teaspoons baking powder

Icing
2 1/2 tablespoons soft unsalted butter
1/2 tablespoon of milk
4 1/2 cups of icing sugar
1 tablespoon of vanilla extract
A couple of drops of blue food colouring

Method:

  1. Preheat the over to 160 degrees Celsius (fan forced). Place cupcake patty pans into cupcake/muffin tins.
  2. Place all ingredients into a bowl. Use an electric mixer on low speed until ingredients are combined, then mix on medium speed for a further 2 minutes (remember to scrape down the sides of the bowl during mixing!)
  3. Spoon batter into patty pans, bake until the cupcakes spring back when lightly touched, or a cake tester comes out clean.
  4. Remove from over and cool on wire rack. Remove cupcakes from tin once they have cooled.
  5. When cupcakes have completely cooled, make icing - add all icing ingredients into a bowl, and using an electric mixer, mix on low speed until ingredients are combined. Mix for a further 5-6 minutes on medium to high speed.
  6. Spread or pipe icing onto cupcakes. Top with cupcake flags
