Jam Drops

Ingredients:

180g softened butter
1 cup sugar
1 egg
2 cups plain flour (can substitute with spelt flour)
1/2 teaspoon baking powder
Jam (we used blueberry!)

Method:

  1. Beat butter and sugar until light and creamy.
  2. Add egg and beat.
  3. Stir through flour and baking powder.
  4. Roll 2 teaspoonfuls into balls, flatten slightly and press finger in the middle to make a well for the jam.
  5. Add jam.
  6. Bake for 10 minutes in oven - 160 degrees fan forced - or until golden.
  7. Add extra jam to the holes while still hot.
  8. Cool on wire racks.
