
Jam Drops

Ingredients:
180g softened butter
1 cup sugar
1 egg
2 cups plain flour (can substitute with spelt flour)
1/2 teaspoon baking powder
Jam (we used blueberry!)
Method:
- Beat butter and sugar until light and creamy.
- Add egg and beat.
- Stir through flour and baking powder.
- Roll 2 teaspoonfuls into balls, flatten slightly and press finger in the middle to make a well for the jam.
- Add jam.
- Bake for 10 minutes in oven - 160 degrees fan forced - or until golden.
- Add extra jam to the holes while still hot.
- Cool on wire racks.
