White Chocolate and Macadamia Cookies


Based on 'Basic Biscuit Dough' recipe by Don McMurray, published in 'Don's Delights' by Don McMurray

Ingredients:

250g softened butter
2/3 cup caster sugar
1 egg
2 1/4 cups plain flour, sifted (can substitute with spelt flour)
1 teaspoon of vanilla essence
1/4 cup white chocolate chips/chopped white chocolate
1/4 cup macadamia chips/chopped macadamias

Method:

  1. Preheat the over to 160 degrees Celsius (fan forced). 
  2. Cream butter, sugar and vanilla essence with electric mixer.
  3. Add egg to mixture, and mix until combined.
  4. Stir in 2 cups of flour for a soft dough, or 2 1/4 cups for a firmer dough.
  5. Add white choc chips and macadamia chips.
  6. Stir with wooden spoon to combine. Roll into teaspoon-seized balls and press down slightly onto tray.
  7. Bake until golden, then remove from oven. Leave on tray until cooled.
