
White Chocolate and Macadamia Cookies
Based on 'Basic Biscuit Dough' recipe by Don McMurray, published in 'Don's Delights' by Don McMurray
Ingredients:
250g softened butter
2/3 cup caster sugar
1 egg
2 1/4 cups plain flour, sifted (can substitute with spelt flour)
1 teaspoon of vanilla essence
1/4 cup white chocolate chips/chopped white chocolate
1/4 cup macadamia chips/chopped macadamias
Method:
- Preheat the over to 160 degrees Celsius (fan forced).
- Cream butter, sugar and vanilla essence with electric mixer.
- Add egg to mixture, and mix until combined.
- Stir in 2 cups of flour for a soft dough, or 2 1/4 cups for a firmer dough.
- Add white choc chips and macadamia chips.
- Stir with wooden spoon to combine. Roll into teaspoon-seized balls and press down slightly onto tray.
- Bake until golden, then remove from oven. Leave on tray until cooled.
